Everyone deserves a treat every now and again! This chocolate chunk cookie recipe is the best I have come across. I put plenty of big chunks of chocolate in, the original recipe was 200g of chocolate but I double it to 400g!
150g softened butter, 80g light brown muscovado sugar, 80g caster sugar, 2 tsp vanilla extract, 1 large egg, 225g plain flour, 1/2 tsp bicarbonate of soda, 400g chocolate, 1/4 tsp salt.
Cream butter & sugars then beat in vanilla & egg. Add sieved flour, bicarb & salt - mix well. Add chocolate in large chunks (I like 2 pieces chocolate together in one big chunk!)
Bake Gas 5 (190 C) for 8 - 10 minutes. (I like my cookies soft & chewy so take them out when just lightly browned, if you like them crispy leave them in a bit longer)
